Music seed garlic is the celebrated Porcelain hardneck brought from Italy to Canada by grower Al Music in the 1980s and named in his honor. It became a leading garlic in Ontario and Quebec before spreading widely across North American gardens. It is an easy variety to recommend to someone trying hardneck garlic for the first time, yet its Italian-to-Canadian story and dependable performance keep experienced growers coming back. The balanced flavor fits nearly any kitchen.

The flavor is rich and medium in heat rather than aggressively sharp. Raw cloves add classic garlic presence to pesto, hummus, dressings, and marinades; roasting transforms them into a smooth, aromatic paste for bread, potatoes, sauces, and soups. Because the cloves are broad and easy to peel, Music is especially convenient for recipes that use whole cloves or require a large quantity of prepared garlic.

When growing Music, plant the large cloves in fall where they will receive full sun and a proper winter chill. Its vigorous leaves appreciate consistent moisture during spring, along with room free of weed competition. Harvest the scapes once they make a curl for a tender bonus crop. Check bulb maturity around mid-summer as lower leaves brown, then lift carefully and cure the white bulbs with good air circulation before storage.
